Food, Fun and Friends at the Scrapathon!

We had such a great time at the Scrapathon this past weekend. Thanks to all who joined us to scrap, eat and scrap some more. The bean salad that Lorrie served at lunchtime was a big hit--so here is the recipe for those who wanted it :)

Lorrie's 4 Bean Salad

4, 8-oz cans of beans (I used red kidney, pinto, black and great northern)
Other possibilities ...cut green beans, lima beans
1 purple onion or sweet onion, chopped
2/3 cup apple cider vinegar
1/2 cup salad oil
1/4 cup sugar

Drain canned beans. In large bowl combine beans and chopped onions. Whisk together vinegar, oil and sugar. Pour vinegar mixture over vegetables and toss lightly. Cover and refrigerate for 8 hours or over night, stirring occasionally. Drain before serving. Serves 8.

Sorry I missed it. For those of you who have never been, the scrapathons are the greatest. Where else can you scrap for 12 hours with the funnest people in town?

Sounds DELICIOUS! Can't wait to try the recipe out at home. Wish I could have made it to the Scrapathon! Glad you guys had a great time!

Not only was the bean salad wonderful but the turkey dinner was delicious!! The pumpkin and pecan pies made by Julie were do die for!!! The scrapathon was so much fun and the Elvis singers capped the night off!
